Today, however, it is an independent Republic with one of the highest per capita incomes in Europe and a fashionable destination for tourists. Burt Wolf explores the city's Viking history, visits the Guinness brewery to learn how to "pull" a perfect pint, discovers the origin of the Guinness Book of Records, tours the town's classic pubs, and finds out why the ancient Book of Kells is the most valued cultural object in Ireland. Jacques Pepin: More Fast Food My Way  "Brussel Sprout Love"  If left on a desert island, Jacques thinks he'd be quite happy if only there were some chickens! For Jacques, the prize part of the chicken is the thigh and he thinks you'll agree when you try Crusty Chicken Thighs with Mushroom Sauce served with a tasty Fricasse of Brussels Sprouts and Bacon. An inspired use of instant potato flakes to thicken a soup shows up in the fast cooking Seafood Chowder topped with fresh crabmeat. To end on a relaxing note, Jacques arranges a presentation of Stilton with Apple and Nuts to accompany a delicious glass of vintage or aged Tawny Port. D

Other recipes include Back Bay Clam Chowder, and Wellfleet Cranberry Scones. Kitchen Goddess Andrea then explains how to serve scones. D

Joanne Weir's Cooking Confidence  "Gingerly"  Joanne introduces her student Ron to the versatility of the often overlooked gingerroot, greeting him with poached shrimp with a mango dipping sauce made with freshly grated ginger. It is then brought together with mussels steamed with mustard greens, lemon grass, and ginger with grilled bread and ginger aioli. Recipes: Shrimp with Mango Dipping Sauce, Mussels Steamed With Mustard Greens, Lemon Grass and Ginger, and Grilled Bread with Ginger Aioli. D
