She meets up with Ixchel Ornellas, a chef, restaurant owner, and one of Mixteca's best cooks, who invites her on a personal tour of her city. Then, back in her kitchen, Pati creates new recipes based on that experience corn soup with queso and pescado agridulce. D

Mexico -- One Plate at a Time with Rick Bayless  "Mole Is Mexico's Mother Sauce"  San Pedro Atocpan is a small town that produces some 60 percent of the mole eaten in all of Mexico, and Rick is pretty much the perfect tour guide to show us around. We'll see mole in its many mouthwatering forms, including the elegant mole madre at Enrique Olvera's Pujol. In his Mexico City kitchen, Rick leads a lesson in red mole making. D

Samantha takes this golden opportunity to take in all these wondrous delights, and travels around visiting iconic places throughout this historic country. From visiting an Alpine Garden on an idyllic mountaintop to going deep underground experiencing the Cheese Grotto in Gstaad to biking through the waterfall covered valley of Lauterbrunnen and finally to floating down the icy cold Aare River in Bern: Samantha has a most adventurous Swiss journey. Steven Raichlen's Project Smoke  "Thanksgiving Comes Early"  The secret to supernaturally moist turkey? The Project Smoke version involves a whiskey brine and a slow smoke over maple wood. The traditional side dishes get smoked, too: bacon-stuffed barbecued onions, smoky creamed corn, and a smoky bacon-apple crisp for dessert. Even the cranberry sauce (salsa in this case) has fire thanks to the strategic addition of jalapenos. D
